Living Like a Lion (Carnivore Diet Update)
So it has been 5 months since Brandon and I started the Carnivore diet. First things first, Brandon loved it and continues it on a modified basis still today. Not that he needed to lose weight, but he lost 30lbs in the 5 months and feels the best he has in years. He will now eat garden fresh vegetables and will use some select sauces as long as they are sugar free and have clean ingredients.
I, on the other hand, struggled from the beginning... Eating a meat heavy diet was not easy or fun for me and I did not last past the initial 30 days. I topped out at about a 13lb weight loss and felt great, but mentally I just could not stay motivated. My immediate thoughts were that I failed.
Thankfully life and God doesn't work that way and I have felt grace throughout this journey. While I do not follow the Carnivore diet 100% of the time, I have made some changes that have been more sustainable for me and are helping me be more mindful of what I am eating. Am I getting a true cleanse or body reset, no... but am I learning how to better take care of my body and overall health, yes! To me, that is what matters most. I am constantly reminded of how much I have learned along the way and we would love to share just few things that helped us.
1. Chaffles (cheese waffles!!) - When we are missing a burger or brat bun, these are our go to. Plus the kids like to eat them just as they are from time to time!
2 eggs
1/2 cup grated cheese
Whisk ingredients together, heat your waffle maker to med/high heat then butter it before pouring mixture on (amount you pour will depend on the size of your waffle iron). Cook for approximately 4 minutes.
2. Buy large blocks of cheese at a time - I grate about a pound at a time and package it in our fridge, then slice the rest so that we have fresh cheese on hand but get a better $, than buying from the deli.
3. Hardboiled eggs - They are the unsung hero of our house. When Brandon and I are going to be out at a Farmer's Market or somewhere that may not have food options for us, we pack hardboiled eggs. Pair them with a few slices of cheese or your favorite "clean" beef stick and you have a filling meal or snack.
4. Quesadillas (not how you are thinking of it though 😉) - I love to line a baking pan with parchment paper, then lay several slices of cheese down side by side. I then turn on my broiler and put it in the oven for just a few minutes. The slices all melt together and you can then put whatever meat on one side, then fold the other 1/2 of the melted cheese over. If you want to add sauce, we recommend Lilly Q's Sugar Free line or you could just dip your "quesadilla" into sour cream for some additional creaminess.
5. Heritage grains - While this is not on the Carnivore diet, we have added heritage grains to the list of things we will eat at home. So I have updated my sourdough starter and now make Einkorn sourdough bread or a more traditional sourdough with heritage red wheat. This a great treat when you crave bread, like I do!
The moral of this story, every journey is different so if you are trying the Carnivore diet HAVE FUN WITH IT! You can try unique recipes or make a brisket and eat off of it for days... whatever sounds good to you! If you are looking for a dirty Carnivore ice cream recipe, stay tuned!
